This is one of my favorite dishes! I like it so much that every year I make a big dish for the holidays!
On the night before I prepare it, I put the cod in a bowl of water inside the refrigerator. On the following day, I pour out the water and transfer the cod to a large pan, cover the fish with water and let it boil. Pour out the water once again, then add fresh water and the peeled potatoes. Let it boil. I do this last step so the potatoes can get the fish’s flavor.
While I wait, I dice the tomatoes, chop the olives, slice the onions, and put the eggs to boil.
When the potatoes are cooked (around 20-25 minutes), drain the water and wait for them to cool down.
Now it’s a good time to sauté the onions with a splash of oil (I use grapeseed) and let them caramelize. I like to give them a caramel/brown color.
When I have all the components ready, I can start assembling the dish. First, I shred all of the cod and spread half of it on the bottom of a large baking dish. Next, I slice the potatoes and arrange half of them on the top of the fish. I spread the caramelized onions, tomatoes, olives and capers (optional). Then I add a new layer off the remaining fish and potatoes. I slice the hard-boiled eggs and spread them on the top. To finish, I sprinkle it with Parmesan cheese and a drizzle of olive oil. When it’s close to serving time, I warm it in a 350 F oven for around 20 minutes. Garnish with chopped parsley if you like. Enjoy!!
