Happy New Year!! Wish you all a year full of food adventures!
A couple of days ago it was my birthday, and all I was thinking about was a day of rest!! So I had this wonderful idea of asking my husband and kids to prepare our lunch while I was with my feet up reading a food magazine (of course)!! Since my mom was here with us, she suggested being a guide while the cooking was in process. So we sat down together and planned a meal that was at the same time delicious and easy for them to accomplish. The menu was agreed as following: baked fresh cod, steamed broccolini, mashed potatoes and sautéd zucchini with garlic flakes. It tuned out amazing!! I was very proud of my team, but have to admit that it was a bit fun to watch them all at the same time trying to cook a whole meal!
The fresh cod was seasoned with salt, pepper and the juice of one lime. Then my son sprinkled some bread crumbs on top, drizzled olive oil and scattered a spoonful of capers. It baked for 15 minutes (always check for the opaque color of the fish).
The broccolini was steamed with a bit of water for 3 minutes.
The zucchini was seasoned with salt and dried garlic flakes. Then sautéd for 3 minutes in a drizzle of Grapeseed oil.
For the mashed potatoes, my husband and daughter peeled the potatoes and boiled them in water and salt until they were soft. Then they added a splash of milk, 4 tablespoons of butter, and mashed them. After that, everything was ready to eat.
I was so excited with the outcome that I couldn’t resist myself and ended up plating the food and taking pictures of it. I had to make a blog post out of it!! Super delicious!!! Amazing birthday present!
