    • Pasta with Tomato Red Pepper Sauce and Grilled Shrimp

      A couple of days ago there was a rainy day and to please the family, I decided to cook something that they love: pasta and shrimp. I started cleaning the shrimp (deveining and taking the shells off). Then I seasoned it with lime, salt, pepper, some dried herbs (today I used herbs of  Provence), and a drizzle of olive oil. While the shrimp marinated, I cooked the pasta according to the package instructions, just adding a little salt. For the sauce, I put in the food processor tomato,  red pepper, cilantro, olive oil, salt, and pepper. I processed it until it got a creamy consistency. Next, I grilled the shrimp, around 3 minutes per side (we want it to have an opaque color). So when the components were ready, I mixed the sauce with the pasta and served it on individual plates. Put 5 to 6 shrimp per person, drizzled some olive oil, sprinkled parmesan cheese and finished with chopped parsley. Everybody was happy!!

      Your list…(4 servings)

      1 Lb shrimp

      Herbs the Provence (or any other herb that you like)

      1 lime

      Salt, pepper and olive oil to taste

      1 package of pasta (I used linguine)

      1 tomato

      1 red pepper

      1/2 cup of cilantro

      Parmesan cheese

      Parsley

    • Pasta with Arugula Pesto

      Once again I’m cooking pasta for the kids to bring to lunch. But what can I say, they love it!! So to change things a little bit, I decided to do something different from the usual pesto sauce… instead, I made an arugula pesto sauce. First I cooked the pasta according to the package instructions. Then in a small food processor, I put a cup of arugula, 1/4 cup of walnuts, 1/4 cup parmesan cheese and 1/4 cup olive oil (if you think it’s too dry add a bit more of the olive oil). After processing it, I mixed the sauce with the pasta. And that’s it. Super simple and the kids were very happy!!

      Hello! Yesterday I did a quick and easy recipe for the kids to bring to lunch. I boiled pasta, and while I was waiting for it to cool down, I prepared the sauce. I washed and took the seeds off  one red pepper. Then I cut it in large pieces and put it in a food processor with a pinch of salt, a pinch of pepper, and a drizzle of olive oil. Process it until it has acquired a creamy consistency and mix it with the cold pasta. My kids eat this dish at school as a pasta salad (cold), but it’s up to you if you prefer to eat it hot. To finish I sprinkled a bit of parmesan cheese and dried cilantro (or any other dried herb of your choice). The lunch boxes came back empty!!!

    • Mediterranean Pasta Salad

      Super simple!! This is a little spin on a regular pasta salad that my kids love. I cooked half a package of penne and after it was room temperature, I put it into the fridge to cool down. Then I cut one small tomato in small dices, cut a handful of Kalamata olives in half (just to make sure they didn’t have any pits left), and crumbled some Feta cheese. I tossed all the ingredients together, added a couple of basil leaves, drizzled olive oil and seasoned with salt. The kids loved it!!!!!

    • Pasta Salad

      Yesterday night I started thinking about what to send in the kids lunchboxes. I was tired and didn’t feel like doing anything too complex… So, I boiled some pasta (rigatoni) in water and salt and planned to add a sauce the next morning. To the cold pasta I would add pesto sauce, which is my kid’s favorite, and we had Pasta Salad!!! Sometimes, I add cherry tomatoes cut in half and diced fresh mozzarella cheese. It’s a hit with the kids!!! But you can always change the cheese and add a vegetable of your choice.

      As I mentioned I used store bought pesto. During the summer months, when I grow herbs, I make my own sauce. I skip the garlic, because my husband doesn’t like it. But when it’s cold, I find it easier to buy at the store. This one from Costco, Kirkland brand, is extremely tasty and the whole family loves it. It can also be used on sandwiches, pizzas and chicken dishes. IMPORTANT: it contains pine nuts!!!
