This is a traditional Brazilian dish that my mom used to make while I was growing up. I’m pretty sure that in every region of Brazil this recipe will vary a little. And I can bet that they are all delicious! Once you have all the vegetables rinsed and peeled, the only thing left to do is arrange them on the pan and cover them with water. Simple as that! I have to confess that last month I bought a pressure cooker and I’m using it for this recipe. It definitely makes the meat cooking process faster. This recipe can also be made on a regular pan but it will take a bit longer to have the meat cooked to the right consistency (falling apart).
Below are the ingredients that I used, but this is a dish that you can use any vegetables and meats you like. You can even make it vegetarian using the vegetables that you enjoy and adding some vegetarian sausages.
Meat 1 .5 LB (I used skirt steak but flank steak is another option)
Sausage 1 package (I used Mild Italian Chicken)
6 medium potatoes
2 bunches of collard greens
2 sweet potatoes
1 small cassava
1 small onion
4 eggs ( boil them separate and add to the dish at serving time)
Assemble all the ingredients on the inside part of the pressure cooker, not leaving too many spaces empty. Cover with water and cook for 30 minutes. When it’s done, open the pan and assemble the meats and vegetables on a serving dish. Do not forget to add the boiled eggs. Drizzle with olive oil and it’s ready to serve. My husband likes to eat this dish with white rice but I prefer just the meats and vegetables.
Important: If you are not using a pressure cooker, you have to boil the vegetables and sausages in a separate pan because the meat is going to take a while longer to get the right consistency.
