My parents just spent two weeks with us and while they were here I decided to start making only salads for dinner to help my mom keep up with her diet. As we have our main meal for lunch, I thought that it would be a great idea to have a good composed salad for dinner to balance our day. We tried to be creative and do always something different. I have to say that everybody in the house that adopted the salad “plan”, lost a bit of weight!
So here follows one of the recipes that we did. They are all very simple and interchangeable, and at the same time very delicious and fulfilling.
Salad greens (hearts of butter lettuce and baby red butter lettuce)
Baby potatoes (cut in half and boiled)
Hearts of palms
Parma prosciutto (slices baked in the oven until crisp and then crumbled)
Olive oil, salt and pepper
