Hello everybody! Today I prepared a very easy and quick recipe for our lunch using one of my favorite fish. I love dishes with salted cod but the fresh version is equally delicious and satisfying. It takes almost no time to cook, usually it’s ready in 15 minutes. Sometimes I let it stay in the oven a bit more so the crumbs get crispier.
1.5 Lb. of fresh cod
1 lime (zest and juice)
1/4 cup of breadcrumbs
1 tsp of dried cilantro (or another dried herb of your choice)
Salt, pepper and olive oil
Pre heat the oven to 350 F. Rinse the cod, cut in small portions and arrange it in a baking dish. Squeeze the lime juice on top of the fish. Season with salt, pepper and dried cilantro. Sprinkle the breadcrumbs and the lime zest. Drizzle with olive oil. Put it in the oven for 15 to 20 minutes. You want the crumbs to have a bit of color. To check if its done, make sure the fish is opaque white and also if the flesh comes out in flakes.
