I tried to make fruit bars in the past and they never worked quite well… They turned out too soft, too hard or too sweet… But this time, they were so good that they didn’t last long. They are very easy to make and you don’t need to have exactly what’s in the recipe. Just use what you have in your pantry. I used honey for sweetness and as binding agent. As I included dates, I thought they would add enough sweetness to the recipe…but I knew that my family would like the extra touch of sweet from the honey…Those bars are great to put in the kids lunch boxes, my husband likes them for breakfast and I eat them as an afternoon snack.
Preheat the oven to 325 F.
1/2 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
1/8 tsp cinnamon
1/2 cup honey
1 cup chopped dried fruit ( I used dates, apricots and cranberries)
2 cups chopped walnuts ( you can use different nuts)
1 egg beaten
Mix all the ingredients, making sure to separate all pieces of dried fruit. Put the batter in a 8 inch square pan (greased with parchment paper). And bake for 30 to 35 min or until set.
Wait to cool and cut into squares or rectangles. Enjoy.
